Chocolate Pi(3)

Today’s blog post will be the quickest ever because I need to get back to eating my pie…but I wanted to share this totally whacky recipe for chocolate pie. It’s the simplest recipe ever, and has a secret ingredient: TOFU?!?

Don’t knock it until you try it, I promise it won’t disappoint…


3-Step French Silk Pie
1 (12.3 oz) package lite silken tofu
1-1/2 cups dark chocolate chips
1(9-inch) pie shell, baked
1.) Melt chocolate in a double boiler (or using a bowl over a pot of simmering water) or in the microwave.
2.) Add tofu and blend with an immersion blender until thoroughly integrated.
3.) Pour mixture into the pie shell and chill for at least three hours. (I put mine outside on the deck when it was 20-degrees)
